[En] Hibiscus Jam

Hibiscus Jam? Yes, it is possible. I grew up in Cote d’Ivoire and there, hibiscus juice also known as bissap is always available at all types of ceremonies. The juice is also sold at every street corner. It is drunken cold, and it help with the hot weather. Growing up I only knew hibiscus into the juice form. I came up with the idea to make a jam out of it. How to do it? Where to begin? I frankly never made jam before and I started to research on it and I successfully made some hibiscus jam. The result is delicious.

Ingredients for 2 cups of Jam
  • 16 oz of hibiscus flower
  • 4 cups of water
  • 1 lbs of sugar
  • 1 lemon juice
  • 1 clean plate to put in the refrigerator

  • Rinse well the flowers twice 
  • Boil the flowers for 10 minutes
  • Take them off the stove and filter them to separate the flowers
  • Mix the hibiscus flowers until you get a smooth paste
  • Put the juice filtered back on the fire at low heat and add the hibiscus paste, lemon juice, and the sugar
  • Stir occasionally and let it cook for 40 minutes
  • To test the consistency of the jam, remove the clean plate that was put in the fridge  and put a little bit of jam
  • Put the plate in vertical position, if the jam does not flow immediately, then it is ready.
