Mango Oxtail [En]

More than a week without posting a recipe on my blog!!!! I really appreciated everybody’s concerns and all those funny questions too. The one that made my day was:  « Is the kitchen empty ?» The kitchen is full do not worry. I need more space in the contrary. I have been really occupied and I took a little vacation to Disney World with Yohan. It was magical and we both had a blast. We danced and laughed so much. For those that already follow me on Instagram and Snapchat, they know that I have been trying to post little snaps of my daily cooking. 
I wanted to make some jerk oxtail from scratch but it turned out to be a fail from the beginning. Wanted to make my own jerk mix. Well it was not a good idea. Out of 10 ingredients I probably had 3. What a shame 😅😅. I was not feeling like going to the store too. Therefore I gathered my 3 ingredients and added more on my own. The recipe I know suggests mango or pineapple to be added, and I had mango. I decided to add more mango to make it my principal ingredient.  At one point, I wanted to drop the project because oxtail are quite expensive, and I would have been hurt to waste it. While cooking it smelled so delicious. They turned out juicy, tender, and very tasty. I did not let them marinade but they turned out very good.

Here are the ingredients you will need for 2:

  • 1 oxtail cut in pieces
  • 1 medium mango
  • 1/2 ginger (about 2 inches)
  • 1/2 onion
  • 1/2 green bell pepper
  • Thyme
  • Salt pepper
  • 3 tablespoons of soy sauce
  • 1 pepper (if you want it spicy or 1/2 for less spicy)
  • 2 tablespoons of olive oil
  • 1 grill (I used a charcoal grill) 

Easy Preparation
  • Turn on the grill 
  • Chop all the ingredients (do not puree them)
  • Put them on the oxtail
  • Put the oxtail for one hour and turn occasionally
  • Serve with rice, left of mixture and tomato sauce

I did not want to puree the ingredients because I wanted pieces of them on the meat that will dry up while cooking and give a crunchy flavor taste.
