Roast Lamb Leg with Jollof Couscous [En]

Hello my dear, I am here to present a roasted lamb leg that will make you lick your fingers. I am not going to write for too long because the recipe is long and you will have to start now to make it.

Ingredients for the Roast Lamb leg (for 4):
  • 1 lamb leg of 45 lbs
  • 1 head of garlic
  • 1 small piece of ginger
  • 1 tbsp of black pepper
  • 1 tbsp of salt
  • 1 tbsp of paprika
  • 1 tbsp of dijon mustard
  • 1 sprig of thyme
  • 1 laurel leaf
  • Olive oil
  • Vinegar
  • 1 pepper (optional)
  • 1/2 lemon

Ingredients for the Jollof couscous:
  • 1 lbs of couscous
  • 2 carrots
  • 1 zucchini
  • 1 bell pepper
  • 1/2 onion
  • 3 ounces of chickpeas
  • 4 cups o water
  • 2 cups of vegetable broth
  • 4 tbsp of tomato sauce or 1 teaspoon of tomato paste
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 laurel leaf

  • Mix garlic, ginger, black pepper, salt, paprika, mustard, thyme, laurel, olive oil, vinegar and the optional pepper 
  • Rinse the lamb leg, remove the excess water and add the lemon juice to tenderize the meat
  • Make cuts in the lamb leg and add the mixture all other 
  • Close the lamb leg and let it marinate 8 hours or overnight for more flavors in the refrigerator
  • 8 hours later, preheat the oven at 400°F
  • Remove the lamb leg from the refrigerator, add a little olive oil and put it in the oven for 3 hours
  • Turn the roast every hour to check that it is cooking well
  • Get some of the juice from the roast and save
  • Cut the onion, carrots, bell pepper, zucchini
  • Caramelize the onion, add bell pepper and carrots
  • Add black pepper, salt, tomato sauce
  • Add the roast juice
  • Add the vegetable broth, water
  • Add zucchini, chickpeas, laurel leaf et let it boil
  • Remove the vegetables, put them aside in a little pot
  • Add a little bit of broth or water to the vegetables and let it cook 10 minutes on low heat
  • Add the couscous to the broth where you removed the vegetables
  • Add the couscous slowly while stirring so the couscous do not stick together
  • Let it cook 5 minutes and serve

I added 1 hot pepper, but you do not have to if you do not eat spicy food.
